Strawberry, rhubarb & lime lemonade

Use homegrown crops for this tasty, summer drink. Or buy organic fruit from your local farmer’s market.


1 ½ cups chopped rhubarb
1 ½ cups chopped strawberries
1 ¼ cups water
¼ cup sugar
1 teaspoon lemon zest
1 sprig fresh mint
1 cup sparkling water
1/3 cup freshly squeezed lemon juice
Sliced lime, sliced strawberries and sprigs of mint, for serving

Add rhubarb, strawberries, water, sugar, lemon zest and mint to a saucepan and bring to the boil, stirring constantly until the sugar has dissolved. Reduce to a simmer, cover and cook for 15 minutes.

Remove from heat and allow to cool. Strain and pour into a large jug or bowl.

Add sparkling water and lemon juice, mix, then pour into glasses over ice. Decorate with sliced lime, strawberries and mint.
