I love my slow cooker, and I equally love this slow cooker recipe. You can use any cut of chicken you want – legs, breasts, drumsticks, etc – whatever your family enjoys most. You will have a general idea as to how long to cook chicken in your own slow cooker too. For me, it’s around 5 hours on low. Some slow cookers seem to take longer or shorter, depending on what brand you have. So take that into account.
This recipe also uses more chicken than you would probably otherwise eat in one meal – it allows for leftovers for the following day. Yum!
Slow cooker honey soy chicken
Preparation time: 10 minutes
Cooking time: 5-6 hours in slow cooker
Serves 4
1kg (2.2 lb) boneless, skinless chicken breasts
1/3 cup honey
½ cup tomato sauce
½ cup soy sauce
4 garlic cloves, finely chopped
½ teaspoon dried oregano
½ teaspoon dried basil
1 ½ cups uncooked rice
2 carrots
1 cucumber
2 spring (green) onions
Place chicken on the bottom of your slow cooker.
Combine honey, tomato sauce, soy sauce, garlic, oregano and basil, then pour sauce over chicken.
Cook for 5-6 hours on low, or 3-4 hours on high.
Towards the end of cooking, cook rice and steam chopped carrots.
Slice half the chicken and serve with rice, carrots and sliced cucumber. Sprinkle a few sesame seeds over chicken and top with shredded or chopped spring onions. Allow remaining chicken to cool and store, along with the honey soy sauce, in the refrigerator.
