Mmm. Pear pancakes!

I have to say these pancakes are delicious (yes, OK, not so modest). I made a batch yesterday and demolished the whole lot in one sitting (my waistline is not thanking me for it). So I made another batch today, just to make sure they really were that delicious. I was right the first time. They are.

These pancakes are perfect for dessert, breakfast or after school snacks, or you could whip some up when you have the girls over for brunch or morning tea.

I think, presentation-wise, they look much better as individual servings, as shown here, though for a quicker option you could make large pancakes and simply cut them. After all, they still taste the same.

Pear pancakes

Preparation time: 10 minutes
Cooking time: 10 minutes

1 ¼ cups flour
1 teaspoon baking powder
1/8 teaspoon salt
2 eggs
300ml milk
3 pears
¾ teaspoon ground cinnamon
3 tablespoons maple syrup
1 tablespoon butter
Icing (confectioner’s) sugar for sprinkling

1. Make pancake batter. Mix together flour, baking powder and salt. Add eggs and milk and combine. Set aside.

2. Slice pears lengthwise. Toss in a small bowl with cinnamon and maple syrup.

3. Heat butter in a large frying pan. Place a few slices of pear in the pan, 6cm (2 ½ inches) apart. Cook for 1 minute. Turn over, then ladle pancake batter on top of each pear slice. Cook until pancakes have bubbles on top and are slightly golden around the edges, 2-3 minutes.

4. Turn pancakes over and cook for another minute, or until pancakes are golden brown underneath.

5. Repeat with remaining pears and batter. Sprinkle with icing sugar and serve.
