Make Life Easy
This is the easiest, tastiest chilli con carne ever!! Seriously. Ever!! I ate it three nights in a row before I succumbed to freezing the remainder.
I made it in the slow cooker, but you could also cook it on the stovetop. Follow the same instructions, but instead of adding your ingredients to the slow cooker, simmer them in a large frying pan or saucepan on the stovetop for 45 minutes to 1 hour.
Chilli Con Carne
Preparation time: 15 minutes
Cooking time: 6 hours (in slow cooker) or 45 mins to 1 hour on stovetop
Serves 4-6
1 tablespoon vegetable oil
500g (1.1 lb) minced beef
1 stalk celery, chopped
½ onion, chopped
2 cloves garlic, finely chopped
400g (14 oz) tin diced tomatoes
400g (14 oz) tin baked beans
¾ cup beef stock
¼ cup smoky BBQ sauce
1 teaspoon Worcestershire sauce
1 teaspoon cumin seeds
½ teaspoon chilli flakes
Salt and freshly ground pepper, to taste
Rice, to serve
Bunch fresh herbs (such as basil or coriander), to serve
Corn chips, to serve (optional)
1. Heat oil in large frying pan, add minced beef, celery, onion and garlic and cook over medium-high heat until the mince is brown, about 4-5 minutes. Drain off any fat, and add the mince to your slow cooker.
2. Add diced tomatoes, baked beans, beef stock and BBQ sauce to the slow cooker.
3. Add Worcestershire sauce, cumin, chilli flakes and salt and pepper.
4. Cover and cook for 6 hours. Serve over rice and sprinkle fresh herbs on top.
