Mint chocolate cookies

1 cup flour
3 tablespoons cocoa powder
Pinch salt
120g (1 stick) butter, softened
¼ cup sugar
1 teaspoon mint extract
1 large egg

Filling

½ cup cream
200g (7 oz) white chocolate, roughly chopped
1 teaspoon mint extract

  1. Sift the flour, cocoa powder and salt into a mixing bowl.
  2. Using an electric beater, cream the butter and sugar in another bowl. Add the mint extract and egg and beat until combined.
  3. Add the dry ingredients and mix to form a dough. Roll into a ball, cover with plastic wrap and refrigerate for 30 minutes.
  4. Preheat oven to 180 deg C (350 deg F) and grease 2 oven trays. Working on a floured benchtop, roll dough out to a thickness of 3mm (1/8th inch). Use a cookie cutter to cut out shapes. Transfer cookies to oven trays and bake for 6-8 minutes, or until the dough starts to turn golden at the edges. Allow to cool completely before filling.
  5. To make the filling, pour cream into a saucepan and bring to the boil over a low heat. Remove from the heat and add the white chocolate, stirring until melted. Add the mint extract and stir. Allow mix to cool until firm but not set. Use a spatula to ice half the cookies, then pop the remaining cookies on top to form a sandwich.
