Easy weeknight meal: Baked sausages

One of my favourite weeknight meals is this recipe – baked sausages wrapped in bacon. It’s sooo easy – it takes just 5 minutes to prepare – and so tasty.

You just throw the whole lot in the oven and you can get on with whatever else you need to do (kids’ homework, quick cleanup, spot of reading, glass of wine, etc).

Preparation Time: 5 minutes
Cooking Time: 25 minutes
Serves 4

This meal is super easy to prepare and cook. Add extra sausages for lunch boxes the next day.

Serve with salad, or for a more substantial meal, add potatoes to the roasting pan, but chop them into small, bite-sized pieces and roast them for an extra 5 minutes.

4-8 sausages of your choice (I love chorizo)
4-8 rashers bacon
3 capsicums (bell peppers), cut into pieces
3 zucchini, thickly sliced
Vegetable oil
Optional: Potatoes, peeled and cut into bite-sized pieces.


1. Preheat oven to 180deg C (350deg F).

2. Wrap each sausage with a rasher of bacon and secure with a toothpick.

3. Place sausages and chopped vegetables into a baking pan, drizzle a little oil over everything and bake in oven for 25 minutes. The potatoes may need another 5 minutes to cook properly.
