I’ve been working on a brand new weeknight menu plan complete with shopping list (coming soon), so my kitchen is getting a thorough workout these days. One of my favourite meals is this recipe – baked sausages wrapped in bacon. It’s sooo easy – it takes just 5 minutes to prepare – and so tasty.

You just throw the whole lot in the oven and you can get on with whatever else you need to do (kids’ homework, quick cleanup, spot of reading, glass of wine, etc).

Preparation Time: 5 minutes
Cooking Time: 25 minutes
Serves 4

This meal is super easy to prepare and cook. Add extra sausages to take for lunch the following day. You can also add potatoes, but chop them into small pieces and cook for an extra 5 minutes.

Ingredients
4-8 sausages of your choice (I love chorizo)
4-8 rashers bacon
3 capsicums (bell peppers), cut into pieces
3 zucchini, thickly sliced
Vegetable oil

Method

1. Preheat oven to 180deg C (350deg F).

2. Wrap each sausage with a rasher of bacon and secure with a toothpick.

3. Place sausages and chopped vegetables into a baking pan, drizzle a little oil over everything and bake in oven for 25 minutes.
