Basic cupcake recipe
125g butter, softened
3/4 cup caster sugar
1 teaspoon vanilla essence
2 eggs
2 cups self-raising flour
Pinch salt
3/4 cup milk

Lemon Icing
1 cup icing sugar
1 tablespoon lemon juice
1 teaspoon butter, softened
Boiled water

Preheat oven to 190degC.

Cream butter, sugar and vanilla essence until light and fluffy. Add eggs, one at a time, and beat until combined.

Transfer to large bowl and fold in sift flour and salt, alternating with the milk.

Pour mixture into cupcake cases until half fill. Bake for 10-15 minutes or until golden brown.

To make the icing, sift icing sugar into bowl and mix with lemon juice. Add butter and pour half to 1 teaspoon boiled water over butter to melt. Whip icing together to a smooth consistency. Ice cupcakes.

Coca-Cola cupcakes
1 cup Coca-Cola
115g butter
½ cup olive oil
¼ cup cocoa
20 marshmallows
2 cups flour
2 cups caster sugar
1 teaspoon baking soda
2 large eggs, lightly beaten
1 cup milk
1 teaspoon vanilla essence

Preheat oven to 170degC.
Place Coca-Cola, butter, olive oil and cocoa in saucepan, bring to the boil then remove from the heat. Add marshmallows and place lid on saucepan. Leave until marshmallows are half melted, then stir.
In a large mixing bowl, add flour, caster sugar, baking soda, eggs, milk and vanilla essence. Mix well, then add Coca-Cola mixture.
Pour into cupcake cases until half full.
Bake for 20 minutes or until a skewer inserted into the cupcakes comes out clean. Cool before icing with Coca-Cola frosting.

Coca-Cola frosting
5 tablespoons Coca-Cola
1/4 cup cocoa
115g butter
3 ¾ cup icing sugar
1 teaspoon vanilla essence

Heat Coca-Cola, cocoa and butter in saucepan over medium heat until butter is melted, then bring to the boil. Remove from heat and add icing sugar and vanilla essence. Mix well. Let cool slightly then ice cupcakes.
