This quick and easy stir-fry is perfect for a weekday family meal.

Serves 4.
Ingredients:
2 tablespoons sesame oil
4 cloves garlic, finely chopped
1 large onion, sliced
350g chicken, cut into 2.5cm (1 inch) cubes
440g can pineapple pieces in natural juice, drained
3 cups chopped vegetables (eg carrots, capsicum, broccoli, etc)
2 tablespoons soy sauce
2 tablespoons oyster sauce
2 tablespoons sweet chilli sauce (or to taste)
2 tablespoons water

Method:
1. Cook rice as per packet instructions.
2. While rice is cooking, heat oil in large wok or frying pan. Over medium heat, cook garlic and onion for 2-3 minutes, or until onion turns transparent.
3. Turn heat to high and add chicken. Cook for 3 minutes.
4. Add pineapple and vegetable pieces and cook for a further 2 minutes.
5. Add soy, oyster and chilli sauces, plus water. Stir through and cook for 2 minutes.
6. Serve with cooked rice.
