Have an Easter cookie party with your kids or your friends. Whip up a batch of cookies and get each person to decorate their own to take home (or eat on the spot!).

Basic vanilla cookies

125g (4 ½ oz) butter
1 cup sugar
1 teaspoons vanilla extract
2 large eggs
1 ¾ cups flour
2 teaspoons baking powder
¼ teaspoon ground allspice (optional)
1/8th teaspoon salt

With an electric beater, cream the butter and sugar in a large mixing bowl until light and fluffy. Add the vanilla extract, then the 2 eggs and beat until just blended.

Sift flour, baking powder, allspice and salt into the mixing bowl and mix with the wet ingredients until well combined.

Using your hands, mix to a dough. Wrap in cling-film and place in the refrigerator for 30 minutes.

Preheat oven to 180 deg C (350 deg F) and grease two cookie sheets.

On a lightly floured surface, roll out dough to a thickness of 3mm (1/8th inch). Cut out shapes with a cookie cutter. Transfer cookies to baking sheets, placing them at least 2 ½ cm (1 inch) apart.

Bake for 10-12 minutes, or until the edges are lightly browned. Cool then ice.
